For this year’s World Bread Day I decided to make a special bread which is actually very uncommon for Germany, but apparently very common world-wide: Bread made from Corn Meal. In Wikipedia, you find a huge list of different types of bread made from corn meal. Also cornbread is a very popular dish in the US.
The recipe for my Cornbread comes from a cook book I got for my birthday in a swap. It is really great and I will definitely try more of the recipes.
This recipe is called „Southern Skillet Cornbread“. Because I do not have a skillet I made the bread in a cake tin. But unfortunately the cornbread did not come out again that easily and was a bit crumbly. So I think it is really better to use a skillet. Nevertheless, the bread is really delicious. My favorite is to eat it with jam.
Ingredients (in metric units):
- 120g wheat flour
- 120g corn meal
- 1 tblsp sugar
- 2 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 230 ml buttermilk
- 75 g butter
- 2 eggs
Preparation:
Add all ingerdients into large bowl and stir to a smooth batter. Pour batter into greased skillet and bake at 200 degress for approx. 20 minutes. Best serve warm.
